Egg coddlers are a traditional way of cooking softly poached eggs. While their history goes back 200yrs at least in Europe, if you look online you will find chefs today such as Martha Stewart posting recipes and rediscovering this way of cooking eggs.
Crack an egg into a buttered coddler pot, adding other ingredients such as cheese, ham or cream to taste and then tightly screw on the lid. Fill a pan with enough water to come just below the rim of the coddler and after bringing the water to the boil, stand your coddler pot in the pan. Gently simmer to maintain a medium heat – often 4mins is enough to cook the egg. Delicious!
